Pork for Thanksgiving?
For many Americans Thanksgiving Day means turkey. That's fine. But what if you're not fan of turkey? Actually most of all people are not. Turkey holds only 4th position among American meat consumption with only 8% of average person repertoire (according to Economic Research Service, U.S.D.A. Food Availability). There is no problem if you prefer pork. Thanksgiving is not only about turkey, but more about giving thanks and praise. It is about family gathering together, and about warmth of our hearts, about love, and about remembering our history, and about acknowledging God for his blessings.

Are you prepared for Thanksgiving Day?
An elderly man in Phoenix calls his son in New York and says, "I hate to ruin your day, but I have to tell you that your mother and I are divorcing; forty-five years of misery is enough."
"Pop, what are you talking about?" the son screams.
"We can't stand the sight of each other any longer," the old man says. "We're sick of each other, and I'm sick of talking about this, so you call your sister in Chicago and tell her," and he hangs up.
Frantic, the son calls his sister, who explodes on the phone. "Like hell they're getting divorced," she shouts, "I'll take care of this." She calls Phoenix immediately, and screams at the old man, "You are NOT getting divorced. Don't do a single thing until I get there. I'm calling my brother back, and we'll both be there tomorrow. Until then, don't do a thing, DO YOU HEAR ME?" and hangs up.
The old man hangs up his phone, too, and turns to his wife. "Okay," he says, "they're coming for Thanksgiving. Now what do we tell them for Christmas?" (I found this joke here)
Oven pork shoulder recipe
Hands-on time: 10 min
Cooking time: 2 hours or more if you use big cut
Ingredients:
- Pork shoulder roast with fat on it (you also can use pork loin roast). I prefer boned pork shoulder.
- 3-4 Garlic cloves
- Generous pinch of salt and black pepper
- You also need to have foil, oven and roasting pan
Directions:
- If you use regular, not marinated pork, then rub salt and black pepper into the pork shoulder roast. (There should be special sign on the label if it is marinated meat). Otherwise, you shouldn't salt it, but you still need to rub pepper into pork roastr. As for me I prefer not marinated pork for this recipe.
- Make 1 inch deep and 1 inch wide cuts all over the surface of the pork (both sides)
- Slice garlic and force it into cuts. Don't afraid to put too much garlic. You will hardly notice garlic flavor in ready dish.
- Wrap pork shoulder roast in foil. It's important to make such wrap that steam can't escape from the top and liquid can't leak from the bottom. Liquid? Yes, there will be meat juice emited from the pork, and you need to keep it inside wrap. This is very important, because this juice is the main reason of amazing taste. It moistens and tenderizes the meat and hastens cooking time.
- Put foil wrap into roasting pan. I do it only to secure that if meat juice finds its way out of wrap, it won't drop on the hot oven surface.
- Put it in cold oven and set 355o F (180o C). Bake it for 2 hours. I usually set timer for 1.5 hours to check readiness and also to baste the drippings over the roast. But it's not necessary.
When it's done it's so tender, that you can cut it with spoon! If it's not, then give it more time.
Slice it and serve hot with your favorite garnish. I don't make any souce for it, it is extremely yammy as it is. You also can serve it cold as appetizer.
